I don't know much about modding and stuff, but I did notice the Wii U outputs a 1080p signal but displays the Wii's usual 480p and was wondering if it is somehow possible to take advantage of the extra GPU power the Wii U has to increase the vWii's native resolution?

The way vWii works, what you're describing isn't possible, regardless of the Wii U's hardware capabilities. If you want to play Wii games at a resolution higher than 480p, you will need to use an emulator.
