Is it possible to use exfat instead of a fat32 USB stick?

Most of my game backups ended up being way over the supported filesize of fat32.

Nope.

If you're using ISO's, you can use Cobra enabled FW to use them on NTFS.
If you're running folder based backups - you'll likely need to use something like multiman to split them or if you have a full disc image, use something like ISOTools or PS3Tools to split them.

    Use a VPN always with torrents to be safe.
