DVD Creation? (For use in most players?)

Here's my problem. Lately I've been finding myself knee deep in DVDs that I have no use for. I have a lot of Anime I'd like to archive off my hard drive, but not as a data disk. I'd really like to keep them in a format that will work with most players. However, I'm not sure how to go about creating something that will work properly. Most of the video files are MKVs with subs (I'm not sure if they're hard, or soft, but I can find out). My question is, how can I create a proper disk with the subs intact, and with what software.
