Games can use all manner of text encoding, or even not have text encoding and instead just have pictures with text in (a lot of puzzle games do this). Being a modern console the Wii is also no stranger to a full on text engine with all sorts of extras, though I would not assume this is the case until such a time as you actually see it happen.

Figuring out an encoding is considered the first thing you get to learn to do in the text hacking part of ROM hacking. I do not have any Spanish tutorials right now, or any Spanish ROM hacking communities (I have many for other languages but seemingly not Spanish right now) but http://gbatemp.net/threads/gbatemp-rom-hacking-documentation-project-rewritten-for-2012.73394/ and http://www.romhacking.net/start/ work for English. A quick search for Spanish ROM hacking communities does not get me far ( http://foro.romhackhispano.org/index.php might have something as might http://romxhack.esforos.com/portal.php and there is the general site http://www.elotrolado.net/foro_nds-scene_130 which could do something), there are several very good ROM hackers that have Spanish as their first language that frequent here and other hacking communities that might know more here though.

For a nice example of a complex engine seen in a wii game then http://blog.delroth.net/2011/06/reverse-engineering-a-wii-game-script-interpreter-part-1/ . Again though most text hacking is far simpler than that.

If you ask people to a) do the translation, b) teach you everything or c) do the work for you then yeah you will not often get any help. If you are having trouble with some specific area and can show you have at least tried to solve it then you will usually find people far more inclined to help. On the hackers with Spanish as a first language it was more they might be able to direct you somewhere, I have many forums and tutorials for all sorts of languages but not a lot for Spanish.

Those first links cover the basics, however if you are having trouble with an aspect of it then I, or someone else around here, will certainly try to help. Come to think of it I have not been lead hacker on a translation beyond a basic proof of concept thing I did to translate New Super Mario Brothers on the DS to French one time, I did write the docs I linked above and have contributed to several other projects so make of that what you will.
That said I might suggest you first try to translate an English game to Spanish -- you do not want to be launching directly into Japanese if you do not know the language and also because there are some minor technical things that can get in the way.

The game of wii got a patch to english but not complete, but i really want to translate this game taking the reference of the text of the other version and i dont know anything about translation, i just can edit the characters in hex editor, just that, i don't know how to make a table, scripts, dump the text, absolutelly nothing, I heard the games translation its not the same for every game, if you know exactly how to make a translation for this game it will be so good, almost all the text is in main.dol and i know it because i checked all the files, maybe i could learn with an english game but unfortunatelly the people i saw use hex editors that dont support shift jis characters, i gonna check all the pages and maybe i could learn the things i want.
