Delete it through the system menu. Then there will just be the normal photo channel (which you can't delete normally).
If I remember correctly, you can delete it with AnyTitle Deleter. Use this page to make sure you are deleting the correct one...

After you delete it, put in an older Wii game. It will prompt for an update, and if I remember correctly, it should put version 1.0 of the Photo Channel onto your console.
