Apple makes restores for the iPhone 3GS and newer devices contact Apple's servers for a signature (the SHSH blob). Apple does this to try and prevent people from downgrading, which usually results in jailbreaking. Backing up these SHSH blobs will let you downgrade at any given time. To do this, you can use Firmware Umbrella. (GUIDE) Cydia will also prompt you to back it up if applicable, so be sure to let Cydia "Make my life easier"!
You might also want to set up your computer to redirect the SHSH blob request to go to the Cydia servers. (This is a bit on the advanced side, you've been warned.)
