I was looking to get a dockable switch. But I would like to cfw it and run roms and backup my games that I buy so I do not need to take them with me. I would also like to install Ubuntu on it. Are these ideas possible on these new switch consoles?

Newer Switch systems require a modchip. Older systems can be exploited very easily.

To expand on Lacius' answer, Mariko models were released around half way through 2019 and have the bug patched which is most commonly used to install CFW and such onto Switches. There are 2 ways (That I know of) to see if you have one of these models and they are to check the serial number (You can Google something like "Switch serial checker" if you want to do this). The other way is if the box is mostly red. Modding a Mariko unit requires a modchip and support for it is currently only on SXOS which is fairly controversial and currently has an uncertain future due to legal issues. Atmosphere is almost ready to run on these modchips and is the main CFW that most people use. If you don't want to have to install a modchip, you are better off buying an unpatched unit from Ebay or somewhere like that. You can usually get the tablets for around $220 depending on condition and then you could buy brand new joycons seperately or even used if you don't mind some wear on them (If you do want to buy one from Ebay, the search term you want is "Unpatched").

Should also point out that Ubuntu and such is not yet ported to the Mariko units and who knows if it will ever be as I'm not sure if the modchips are too late in the boot process to run anything other than Horizon OS. Don't really know enough about how they work to say for sure though.
 
Im glad you caught what I was implying for 2021. How difdicult is the modchip install? I rghd a falcon and corona a couple years ago.
