In a fit of stupidity, I trashed it. Doesn't look like it's recoverable (there was subsequent stupidity).

For my sanity, what was in that folder? I have a partial listing and it seems like saves and nros, and perhaps some homebrew application data?

The "switch" folder is where homebrew applications are read from. So all of your NROs and such.

So it's just program data? Or is application data also saved there? I definitely had a "saves" subfolder.

The switch folder is where all homebrew apps are stored.
Just download a fresh copy of Atmosphere and that has the switch folder with the standard homebrew apps.
If you were using some other homebrew apps, then you need to put those again in that switch folder.
Games are stored in the nintendo folder and save games are stored internally inside your emummc or emmc.
That saves folder might be a folder from some hoembrew app like Checkpoint/GoldLef/Tinfoil to store backups of save games.
