But if in the future you want to update/downgrade whatever maybe (Probably) you won't be able to do it.

I personally just block with my router the Nintendo Update Servers, it never fails and you can still play online, and I also use TubeHax DNS, just in case.
Hence the "extreme"

buy a wifi card, setup wifi hotspot on your computer, set your computer firewall to block nintendo server
your computer needs to be on whenever you need internet in the wii i but so is proxy approach. and this is more failproof than using a proxy because not all app in the wii u using proxy

I would love to do that, what would be the best way to host the files? Would I need to buy any extra hardware?
You can run the server from your phone or computer. There are a lot of free lightweight web server hosting programs. Don't rely on the DNS option to block the servers. I personally would never trust anyone else to block traffic for me. What if someone makes a mistake and messed up the config and it no longer blocks the server? The best way is to block your Wii U from the internet all together through your router by blocking the MAC ID. Then just host the files on your own web server and access them through the Wii U browser.

If you want to play online then you can't block the internet from the WiiU, but then you have to trust someone else to keep blocking them for you. I have no reason to play online so the above method works for me.

Which app do you use or recommend to host the files from my phone? Android or iOS... it doesn't matter.

Did you mean KWS? If so, I got that up and running thanks to this video:

So, how exactly can I still have the WiiU connect to my local hosted files, without connecting to the actual internet ?
