You could maybe hook up component cables to a HDMI converter and put it through your capture card, or alternatively mod your Wii to have a HDMI port. I don't like the cheap Wii2HDMI adapter shit from AliExpress. It takes the component signal from the video out and fake upscales it to a much higher resolution.
