No matter what I do, whenever I try to play on the switch, while it's docked, my controllers either start having a lot of latency or just straight up disconnect, it doesn't matter if it's joycons or 3rd party, is there any fix?

I forgot to add the detail that I bought it pre hacked so I'm not sure if its attached or not

I would suggest standing near a wifi router/access point and check the signal strength on the switch. If it's not full, the antennas are probably not connected.

I tried it and im getting full signal strength so it's probably not the antennas

Since it is docked related you might want to check if any other devices nearby causing the interference.

Having the same issue on my chipped OLED. Just got it and has been having this issue since. Any fix?

first thing id do is update Mission Control and sys-con to most up to date versions.

Otherwise maybe a wipe and restore is always nice to bring it back to speed. Just take some photos of all your games before you do so you remember which ones were on our system

Do you have the same problems with your controllers if you boot into OFW/stock firmware? This would help us narrow down whats going on. if they run just fine on the stock system, then we can move on to troubleshooting the custom firmware setup. I had a right joycon that did this on both stock and cfw. I ended up doing one of the antenna mods I found online. The left joycon has a nice extension for the antenna, but Nintendo ran out of room I guess for the right one and left good enough pass. I have a friend that is a bit hamfisted and this happened to them. I didnt say it aloud, but it crossed my mind in that it might be their hands attenuating the bluetooth 2.4ghz signal. Microwaves in that range get absorbed best by both water and fat. Anyway, the bit of high gauge wire added helped.
