Hi, I unpacked my Rom and found a sound_data.sadl and sound_data.sdat file. How do I extract the music from those files?

the sdat one is the one you want. When you say extract I assume you mean make it so I can play it on my computer.
A few methods exist, I like Nintendon's ndssndext myself.
Last I checked he removed it from his site ( http://nintendon.s6.xrea.com/ ) but I have a mirror here:
