I found the disassembly/decompilation/source code for the following games:
Sonic 1, Sonic 2, Sonic 2 SMS, Sonic 3 & Knuckles, Sonic the Fighters, Sonic Adventure DX, SRB2, SRB2K, Super Smash Bros. Melee, Naruto GNT4, Footsies
How hard would these be to port over? and uh, how does it work?

I very much doubt you found something secret that thousands of people don't already know about. And many of those thousands of people probably know a lot more about programming than you do. If it was easy to port popular games, don't you think people would be doing it already?

Making a "disassembly" is easy. Making an annotated disassembly which people can actually manipulate in useful ways is much, much harder. Making source code that can be recompiled into the original binary code is even harder than that – and doesn't even apply to games that were written in assembly language to begin with.

And even after all that, sometimes even reverse-engineered source code isn't very useful when it is already more practical just to use ordinary emulation.

ETA: A quick Google search reveals that there is already a port of Sonic Robo Blast 2 to the Vita. (It uses the Doom engine, which is already very, very well understood as far as code goes.)
