Anyone have a save file that has all of the catalogable items laid out on a flat map?

I'd like to know this too! maybe with all recipes as well. I'd really appreciate it.

I didn't pay attention, but the field editor "remove all items on the floor" also removed my mail box, is there a way generate another legit mailbox?

So I used the flat map provided by Asia81

No idea if anyone will have an use of it, but here is a 1* map if you want build your island yourself from scratch.
All cliffs and rivers has been destroyed using terraforming.

I used item spawning cheats that was converted from 1.1.1 so it's missing ones from 1.2.0 onwards.
Just spawned them in inventory and dropped all on top left of the map, so they aren't sorted in any specific way.

In case anyone needs a step by step:
Import all the map data from Asia81 onto NHSE, then import my acres file from the items tab. Enjoy!
PS, I'd be willing to make a proper sorted items map (with all possible variations) if someone can give me a list of items, sorted and categorized, with their hex values. Wanna make an island like this: but I just can't be bothered to figure out all the existing items up to 1.2.1 and figuring out their hex values.

You can spawn yourself a mailbox in your inventory and place it anywhere on the map. The game will treat it as if it was your original one, so you can customize it via Tom Nook etc. FYI, I used a rustic mailbox then customized it afterwards.

Try this. They got all the items in all colors in nhi files and the codes too. This should help, please let me know if you get the catalog island done!

The resident services outside floor didn't import. Is there a way to move it?

1 star map means there's less than 5 residents on the island. If you have more residents, then they would need to be imported directly, or have their houses move. It is under the second tab (buildings), and you can set the location for each and every building, including villagers' houses.

Plaza appears to be 186x, 176y.
Resident Center (198, 181) and Airport (192, 209) are both included in the buildings.nhb

Flag editing can be tricky. Try these files. Either one should work, but the second one is from a town I've experienced fewer bugs with. Lmk if this helps!

I think the flag that enables terraforming is 513--MainmenuConstructLicense. Basically anything "unlockable" has the prefix, "Mainmenu". Check out all the flags on NHSE's source code here: https://github.com/kwsch/NHSE/blob/master/NHSE.Core/Structures/Records/EventFlagPlayer.cs
