Go for the U3 speed, if you are worrying about the card being fake, test it with H2testw, worse case go for the green color Samsung Evo Card as they are sold directly by Amazon, I bought 4 so far, all real no problem at all.

I use SanDisk 400gb been good to me so far.
400gb isn't enough for me & the 512 SanDisks are way too pricey for me.

I have 398GB of games, so I need one of those. Trying to decide which 1 would run better on the Switch though. What do you guys think?
SanDisk is faster in reading a bunch of small files. Samsung is faster when installing games.

Regardless of what Brand and SD card size you would always want to test it to see if it has full capacity, The green one used to be sold exclusive by Amazon directly, when you look at the seller you would see it is Amazon.

I have two of those (128GB cards) that I got from Gamestop they are red though.
One of the colors are exclusive to Amazon, or used to be. They are both real.
Ah so that's why! Had no idea they colored things differently to emphasize their exclusiveness.

Yup I saw that, even their used ones are sold by them. I might order one of those green ones if the red one turns to be counterfeit.

So? They also sell MilkyWay bars their color isn't different from the ones sold at Walmart.

Generally speaking they are roughly equivalent and you'd be happy with either. I don't think you'd notice much difference between them in use, I got the Evo Plus as it was cheaper and I'm happy with it. The higher speed of the Evo Plus really isn't noticeable as my USB NSP installs max out at like 30MB/s anyway (which is plenty fast), the SD reader in the Switch might not be able to take advantage of the full speed.

Between them? The Samsung. Cheaper and a bit faster. You will not notice the faster speed except in your Computer anyway. The SD Card reader is U1 in the Switch, so faster speed is only a option if you use as I said, your computer (if it support the speeds of U3).

I've myself use Sandisk since they're less prown to error. I mean, they give you 10 years warrenty. They trust their cards for sure!

All I know is, I went from a cheap-ass 128GB Samsung EVO class 10, to a 128GB Sandisk Extreme A2, and the speed difference is night and day. I can put games on the card at 78-ish MB/s, instead of 20-ish MB/s. Homebrew and games load up quicker too.
