Hacking Migrate to emuMMC

I had 6.2.0 OFW, made a NAND backup, and have been running 7.0 CFW with AutoRCM for the past several months. I'm interested in going to emuMMC somehow. I've read tutorials for nyx and it looks like Step 1 of the process will be restoring to my clean NAND. Is there a way to move my current CFW and games/saves to emuMMC and restore the sysNAND to my original backup?

The first step does not have to be restoring your NAND. You can setup emuMMC first then restore your NAND so that way your emuMMC retains the save data from your sysMMC.

I thought emuMMC points to a different Nintendo folder than sysnand. Can I just copy the Nintendo folder over to wherever emuMMC is pointing and retain my games and saves that way?

Saves are stored on the NAND itself. The /Nintendo/ folder contains games, updates, etc. Yes, you should be able to copy the Nintendo folder to the new location for your emuNAND to be able to access its contents.
