I’ve been looking into various emulators for my switch, now that I’m running custom firmware, but I’ve seen conflicting things on whether or not there’s a usable GameCube or wii emulator for the switch. Are there any options available?

Nope. just install lakka, copy your ISOs over, and your ready to go

I've been looking further into installing lakka, and it says that my sd card needs to be formatted as fat32, but my computer says that my sd card is formatted as exfat. Will it work with my sd card formatted as exfat, or is there a way to change it to fat32?

You can just move all your sd card files to your computer then use this to format to fat32 https://fat32-format.en.softonic.com/. Then drag your files back onto your sd card and follow the lakka guide.

Whenever I push the hekate payload through using TegraRcmGUI it always boots straight into atmosphere, it doesn't give me an option to load lakka instead. What do I need to do?

Push the payload without any sd card in, then pop it back in when the menu shows up.

EDIT : This happens because it autoboots in Atmosphere by default, you can change that but I never dared to look on how to do so
