Not going online with it is pretty much the sense behind EmuMMC. You can only go online without CFW.
Lol this is false. Patched units who want to retain CFW can only go online with emuMMC because if they update SysNAND to the latest firmware, they lose the only possible exploit that has been confirmed to work for them.

That's right. But there are currently no public exploits for patched units afaik. At the moment, everyone with CFW has an unpatched unit, and in this case it is way better to have the EmuMMC for homebrew / piracy / whatever and the SysNAND for everything "official". Correct me if I'm wrong please.

For the time being, yes. But if everyone parrots the same thing, then there will be mass confusion when patched units can finally utilize emuEMMC because some people will be telling them they cannot go online with emuEMMC when in reality they can. Hell, there is an emuEMMC configuration that mimics OFW so even an unpatched unit can go online with emuEMMC. Another advantage of going online with emuEMMC is that it is much easier to update emuEMMC without burning fuses than updating SysNAND without burning fuses. While Nintendo can check fuse counts and ban users for mismatched burnt fuses, they have not nor have they shown they are willing to implement such a check.

You're right with that. But still, I'd recommend EMUMMC for CFW right now. If there is a "better" exploit that gets released, then the situation will be different.

I have tried and successfully launched emunand and sonfar it works fine. I have 2 switch, one of them has been banned last year. I still don't understand how as I wasn't using it for piracy, just homebrew, mostly emulators, and neved did modify any save file.

emunand is installed on my unbanned unit but to be honest, I keep it in offline although @Draxzelex information make sense, i still don't want to risk it.

The main reason i tried emunand is to transfert my old savegame to the new unit and being able to play BOTW with my previous save :)

Theoretically, Emunand is best suited just for piracy related stuff, and sysnand is for clean nand stuff. [As of this release].
Sadly, if this is the case as of today, then in order to play online with a clean sysnand, will require to update to 8.0.1, which will kill the posibility of a warmboot [no rcm or jig needed] way to boot CFW.

You don't really need any patches. You just need Atmosphere's BCT protection when installing a system update with AutoRCM enabled of course. As for downloading the system update, you can do it in OFW or Hekate's Stock mode which is what I do all the time.
