Incognito is the best way to do it because it makes your Switch unrecognizable so you can never get banned, you don't need to worry about forgetting to add the DNS when you add a new wifi connection, plus 90DNS doesn't actually block everything, I've heard people still get update notifications with it, and at any time in an update Nintendo could add more domains that 90DNS might not be updated in time to block before people get banned. All they have to do is silently add a domain that the Switch phones home to and wait a few weeks for people to update before banning everyone. Also, with 90DNS you're trusting the person that hosts it not to one day decide to screw everyone over by allowing everything through. Incognito you just run once to patch your PRODINFO and the only way that could be undone is by you restoring your PRODINFO backup yourself. Don't leave the PRODINFO backup on the SD though as malicious homebrew (or even a malicious game dump) could steal it.
