How does the Switch handle game updates?
Does it just download the latest update (containing all previous updates)?
Or just it go through all updates 1 by 1?

Feel free to point me out some tutorial if that might be around here.
 
While it doesn't technically "contain all previous updates" everything from previous updates works which is all that matters.

It is incredible how not one of you saw that he was asking about game updates, not system updates.
So, to provide a sensible answer: Game updates always include previous ones. No need to grab patch 1 through 8 for Mario Kart (for example), just get the latest one.

If you’re referring to NSP updates that you’re side-loading with a title installer, each update is stand-alone and contains the changes of the previous updates merged into it. You can go from version 1.0.0 to 1.6.0 with a single update.

If you’re talking about legitimate online updating the Switch will download the full update file if you did not previously have an update otherwise it downloads deltafragments and patches your existing update into the newest update.
 
It's funny how at times, installing a 3gb update only adds like 200mb to the total installed size.

Not really if you think about what updates are.

An update is often just a rewrite of a line/bunch of lines of code designed to resolve an issue. These rewrites are usually only a few bytes in size but require the whole file they are part of to be replaced. Now when an update is released they aren't just updating that one line of code, that would be pointless. They are updating whole swathes of files at once and that is why the update size doesn't reflect the changes in code size.

Take RB6 Siege on the PC as an example.

They used to release patches in the 10's of GB's to add new characters and maps and fix glitches and bugs. This often resulted in an update only increasing the filesize by a couple of GB.

In order to fix this they have just recently pushed out an update which in essence redownloaded the whole game to reduce the original filesize of the game. They used better compression techniques and rewrote batches of code in order to reduce the filesize. Going forward now they are able to release smaller patches whilst fixing larger amounts of code at the same time due to the way they have packaged the code.

Concerning the NSP updates. Let's say a game is 1.0 and you install a 1.1 update. Then a 1.2 update arrives. Should you uninstall the 1.1 update with DevMenu (or other) or it's not necessary? I am asking because of the space both might used.
