My switch currently running 5.1.0
Is there anything beyond changing the DNS settings to block future updates that I can do, or now it's just playing the waiting game for me?
(sorry ahead for this stupidly-noobish question, stopped following the "nintendo products hacking scene" since 3ds luma 7.0.4 got released)

5.1.0 is a bit too late to stop updating. There are no exploits (for coldboot or warmboot) known to the public for it so keeping 5.1.0 does not make much sense. But lower is always better.
You can hack your switch for about half a year now.
Just follow my "amazing" guide :D

So if i'm getting it right hacking the switch itself is possible, just not for my current version?

It is possible for any FW, as long as you don't have an ipatched Switch (you can hack those too, but it is not public yet and who knows if it ever will). You can check that by your serial number or by booting to RCM and pushing a payload.
Also, edited my previous response, so that it actually makes sense :D

For the record. if you are still on 5.1.0 as of right now, it is definitely not too late to stop updating. You would actually be just in time. If 6.0.0 isn't out yet, it will be out very shortly and you don't wanna update to that if you plan on continuing with hacking your Switch.

Why? Any FW is hackable. If he wants to keep his fuse count, sure, but he can always update via choidujour and keep his fuses.

That's taking it a little too far. True, all currently hackable Switches can be hacked regardless of FW, but not all CFW are currently working with FW 6.0 and those that are still have issues. More importantly, 6.0 is, as far as I know, a massive spike in detection capability when it comes to XCI and NSP files, so it will make it even easier for Nintendo to detect if you have hacked you Switch and ban you accordingly.

If you are offline (which you should) you don't have to worry. And all CFWs will work/are already working on 6.0.0. From where do you think Xecuter got the "compatibility"?

I would phrase it differently but while 6.0 should work with current CFW some users are having issues and once it is in the wild more issues are likely to crop up that will need attention. So probably not the best idea to update to 6.0 right now.
