This Seems like a good place to ask for help on many systems and not make 3 or post topics. Ok i been out of the loop with the hack/mods and what not. I am going to list what i have and ask what can i do with each one of theses items.

New 3DSXL 9.1U *Main system* - Using Gateway with my Real Nintendo ID with the NAND backup. what is the safest i can update my NAND 3ds to play games online?

New 3DSXL - 9.1U - I want to do something what this system and not update it.

2DS 9.2U - Also want to do something with this.

Wii U - 5.1 or 5.2 i forgot. *The last online game i played was Splatoon at launch.

PSVita - 3.60 - Dont even know where to start.

Tools i have to work with.

Many micro sd cards, GateWay 3ds, Old school DSTwo flash card, Cubic Ninja. and the all knowing internet.

So here is where i am at what can i do with these systems. I am stuck at home with back problems so these keep my mind off my pain and what not/

I can't help with the Nintendo consoles, but for your Vita, the latest native hack is on 3.60. If you want to hack it, it's important you keep it there. This is a native hack, at the moment Vita backup loaders and Vita-mode homebrew is supported with PSP mode support coming along soon as well.

If you want to hack it, simply head to http://henkaku.xyz/ on your Vita and hit the "install button". After that, you can use molecular shell to FTP .vpks over (or use QCMA and the .mp4 trick which can be found around here) and install them on your Vita for backups and homebrew. There is a second way to install backups as well with maidumper, I suggest searching around for more information on that. Check Wololo.net's forums for more information about Henkaku and you can find a list of great homebrew there as well (there's also one here :))

Wii.U I'd say use the Tubehax DNS to block updates (you want to stay on that version, just Google for the dns) and just wait a little bit. Very soon many exciting hacks will be fully released, right now the best ones aren't safe! As for all 3 3DS, you won't be needing any of those flashcards or Cubic ninja. https://github.com/Plailect/Guide/wiki this is the best guide to get the best hack which will also allow what you want to do.

Yep that'll give you info. Just do exactly what he said and you'll be loaded with the best hack you can get. Only downside being you must reinstall on each reboot. The better part is when you install it once. The next time it'll instantly install when opening the browser!
