Can you read?

Me and several other users in this thread have explained what is going on. The game forces dubbing at the very beginning. For some dumb reasons you cannot change this option in the settings before you start the game (even if this option exist). You can't change voice language until you get control of the character, which is about the first 40 minutes.
You also can't choose a voice in the editor which seriously disrupts how you create a character.
There is no option to start the game with the original voices. The only thing you can do is completely mute the game's sound.

you have to exit out of full screen I believe then it's in the menu bar. I could be wrong it's been a while since I've used the emulator so things could have changed in the most recent fork.

you dont just right click mods on the game and add the folder into it then right click on game and cheats

That I have no idea about. And did not even know that was even possible in the emulator. But if possible I think that's for the emulators specific for steamos I believe. I remember seeing someone a while ago that set up key binds for cemu for the WiiU version as well on the steamdeck.
