The second method seems to be by pausing, selecting 2 players and then just controlling cappy on its own, not entirely sure how you would go back to single player though as never played 2 player and use a pro controller

Do you mean the female Goombas? If so, you need to "stack" male Goombas on top of each other until they are the same height as whatever platform the female Goomba is standing on
