I've seen way too much shit, can't remember half of it, and not because it wasn't good, but because too much shit. So expect the top 3, even in categories, to change randomly depending how well my memory works that day. But well, let's divide it in categories I guess.

The greatest of greatest shonen?
It's too long, and to be honest I've only watched the first 50 episodes or so. It did look interesting (though the pace felt too slow), but I think I can't really give a honest opinion given how little from the series I've seen. The mystery feels nice though, and for some reason I liked this half lie (uso) half Aesop "Usopp" character /s, but I'm too lazy to watch so many episodes.

One piece is a great manga, and a terrible anime, due to pacing.

I've seen way too much shit, can't remember half of it
So did I, but what's truly memorable, I'd never forget.

But I'm more of a manga/manhua/manhwa person now, I've read over a thousand and I'm following around 80 atm.
There are some real buried gems there, that if made into good anime, would completely change the top X lists of almost everyone in this world.

And then there are those that the anime failed so hard they became doomed to obscurity. Oh well...

These are the top three that came to mind. There are others that might be better, that I've seen, and I cannot recall at the moment. Shoutout for the Yuyu Hakusho nostalgia.
