You can move channels on the Wii Menu by hovering the cursor over a channel, grabbing it by holding A & B on the Wii Remote, and then moving the channel to any empty slot on the Wii Menu. If you need to change pages while moving a channel, just hover the held channel over the on-screen + and - buttons to instantly flip pages without dropping the channel.
