What are the differences between all the cfw of the psp ?

Is one better than the other ? What do they do ?

The 2 you'll want to use are Pro and LME, they're basically the same. I hear Pro C2 (the latest version) has some issues, so I've stuck to LME.

Personally I use pro-c. They are just different versions ?
What’s the difference between pro and LME ?

Pro C and Pro C2 are different Pro versions, Pro C2 is a newer version but it breaks PS1 games. I can't find a list of what else Pro C2 changes.
Nowadays, Pro and LME are basically the same thing and you'll just want to use whichever works for you.
There's also a psuedo-cfw called Infinity, it lets all PSPs coldboot either Pro or LME on "6.61" (it's really a weird hybrid of 6.3 and 6.61, but for all practical purposes it's 6.61). The only downside to it is that it breaks the Pause function on the PSP Go, but you can just use PSPStates instead.

The differences are indeed minor and not really significant:

PRO - selectable fonts in recovery
(L)ME - selectable colors in "satelite" vsh menu and recovery
PRO - option to disable analog stick
(L)ME - bigger choice of optical drive emulation drivers
PRO - open source
(L)ME - more responsive recovery menu
PRO - pressing select during videos or browser incorrectly opens vsh menu

PRO (non-CIPL) - run after installation with installer, Fast Recovery, or LightSpeed
LME - run after installation with launcher or DarkSpeed
