I came across this a while back. I can't remember which game it was though. Apparently, it's okay to release carts that can't be played without downloading a patch first.
What does the message say exactly? The wording is different between game updates and system updates.
Did you buy the Switch used? Because if the console was formatted removing the game update that was already there, or the game update was deleted, you won't be able to play until you reinstall the update.
BTW, it's not impossible you will just have to wait till the next firmware release to download the update. You gotta be quick though, as it seems Nintendo only allow online access for a couple days following a new revision.

You can play 3.0.0 and under compatible games, but if the console had a game update installed that was deleted, the game won't work again without the update.
