I was playing Bayonetta 3 on switch and noticed the framerate fluctuations as it can't keep to 60fps. I know there are a number of mods that allow games to run at unlocked framerates above 30fps but sadly a lot of these games struggle to maintain 60fps. With Variable Refresh Rate these fluctuations would be significantly less noticeable and really improve the experience. An example would be spiderman on ps5 running in unlocked fidelity mode, Even though it hovers around 50fps it feels so smooth and responsive.

How hard would it theoretically be to implement this on switch?

It's not really going to be possible without extensive hardware modifications (and then software to actually use the hardware). The panel controller isn't designed at all for VRR.

Maybe next generation.

Your best bet in your current situation is to start reading the overclock threads.
