Gaming Viewing unpacked roms

I would really like to extract the text and music from the PWAA. I unpacked the rom, but I can't find a way to read all those BIN files.
Should I open them in Visual C or do something else?

BIN text files can be read with a hex editor, but the problem is that usually you need a special custom table to actually read the text. It's incredibly rare for a game's text to be coded with ASCII.
