In terms of power available to them which has the most power?
Which has all of that power at full use?

I use my DSi for emulators mostly so thats why I'm interested in either of these.
Which has more stable emulators?

The DSTwo. It has a fully working GBA emulator that can run most commercial roms while the DSi one can't. Also, it has a nearly full SNES emulator that is open source (unfortunately the GBA one isn't). As for speed, if you take a look at DS2x86 compared to DSx86 in DSi mode you will find that the DS2x86 version is about the speed of a 40MHz 386 while the DSi version is only a 20MHz 386 (the DS version is a 10MHz 286/386).
