Requesting Help connecting two emulators together on same PC

Hi,
I'm trying to connect two instances of the same emulator together for multiplayer on the same PC. Game is Pokemon Let's Go Pikachu and Pokemon Let's Go Eevee.
I've tried to do this with Eden (v.0.1.1) and Ryujinx LDN (ryujinx-1.3.3-win_x64) but cannot, for the life of me, get it to work. This is the third day I've tried now, multiple hours each time.

Troubleshooting so far:
-Tried editing the Config.json file to change the port used
-Had both instances use Network Interface: WiFi (The PC is on WiFi) and tried Default and even Loopback, none work.
-Tried Multiplayer Mode set to both "RyuLDN" and "ldn-mitm" but neither works
-Tried with and without network passphrase
-Ensured the emulator is allowed through the Firewall
-Even downloaded Radmin VPN to create a second Network Interface for one of the emulators to use, so that the two emulators using the same port number doesn't conflict and close the socket.
-Ensured both emulators were using different, newly created Profiles

For Eden, I was able to successfully connect the two emulators together in the emulator itself (Creating a room, having the other instance join the room), but in-game, they could not see each other.
 
if ur using a legal backup why not just use ur switch to play online? sounds like ur asking for help to pirate online connectivity of a nintendo game.

Not pirating online connectivity, I have no interest in LAN-PLAY or those things. I just want to keep it all within my own local network. No online required

Bump - Day 4, I still can't figure this out. All these emulator websites claim it's super easy to do, so I have no idea what I'm missing. I even create the "portable" folder so each emulator is seen as a completely separate entity.

Perhaps this screenshot would help?
