If you want to ditch the TouchWiz UI that makes up the Samsung official ROM, you can always tryloaders (launchers) like Nova Launcher, which will boot up a new UI for you to play around with. That way, if you want to get back S Voice or S Beam, you just exit out of the (launchers) (or reset the phone) to get back to TouchWiz which has all the Samsung features.

You can still access the apps themselves in the App drawer, can you not?

If you have multiple launchers installed and don't set a default you can choose between them when you press Home. Of course, the popup will appear every time you press it.

If you do set a default and want to change it you can select "Clear Defaults" by going to the launcher's app settings in the main Settings area.
