So, this is just a question. Now that the switch is pretty much different from the 3ds or Wii U, now being able to go back to the home menu any time and also coming back to the app instantly, also with a better RAM and now the capability of running homebrew accessing full RAM, is there anyway to get to run 2 apps at the same time? Just asking, thanks!

It might be possible, I however don't know how HOS is built, so I can't answer your question better sorry.

No
A lot of patches (if not a rewrite) would be needed and nobody is going to take the time to do that (plus all the RAM, GPU limitations)

Applets can run at the same time as regular apps, and homebrew ran through the Album should be able to run at the same time as a regular app (not sure if this is actually the case right now, but if not - then it should be possible without too much effort)
But running 2 normal apps at the same time isn't likely to happen. Normal apps have no regard for memory usage, they assume all RAM is available to use (minus what's reserved for the OS and applets), and even if you used a launcher or patched the system to allow running 2 apps at the same time you would run into memory usage issues a lot of the time and it wouldn't be a great experience.
What exactly do you want to run at the same time though? It's a game console, there isn't much on it besides games, and you wouldn't ever need to run 2 games at the same time. Running a web browser at the same time as other things might be useful but... we don't even have a browser right now.
