I accidentally clicked on the wrong program for opening nes games (desmume instead of fceu) and now whenever I try to change it, it doesn't take. When I try to add the correct program to the list, nothing happens.

Get Types: http://types.sourceforge.net/ (will redirect you to http://izt.name/soft/types/)

Run it and it will ask for admin permission (Vista/7) then show you a window with a bunch of icons and extensions.
Scroll down (or click an icon type N-E-S) til you find NES.
Double click it and go to the Actions tab.
You can remove any/all entries you don't want to use.
In the top boxes, type "open" (without quotes) and then the path to your emulator like this:
"D:\Games\Emulators\FCEUX\fceux.exe" "%1"

Go into Control Panel - Programs - Default Programs - Set Associations
Select .nes and click 'Change program' in the top right corner. Now pick fceu as the program. It may not be in the 'Recommended Programs' list so click 'Browse...' at the bottom left.

This is all assuming you're running Windows Vista/7. The process varies between operating systems.
