Uncharted Drake's Fortune. something like that, apparently, it is really good.
Ratchet and Clank series, I played em before, and are pretty fun.
Oblivion, my friend has it for 360, and it is fun!
Final Fantasy XIII, yeah. I saw the trailer, looks really good.
Note: Some are JPN-only and some haven't been released in the US yet (White Knight Chronicles), and like Gamefaqs doesn't consider Borderlands a RPG even though I guess it has elements to it. So it's not a perfect list, but good enough for your purposes.
I've heard good things about Valkyria Chronicles (I bought it on word of mouth alone), Eternal Sonata , there are demos for both of these two on the PSN.
Fallout 3 is good but gets repetitious, Cross-Edge is a 2d throwback, but I've heard it has a interesting twist to it.
Check the list out, the reviews and such, but at least you have more choices than you might think, or that other people might allude too. Good Luck.
Oh I forgot, also there are PS1 RPG's you can d/l and play on the PS3, so there you go as well.

Seriously to the TC I'm with Epic, and he knows my tastes and they don't lean heavily on the FPS and I barely touch 3D fighters or racing games either. Sure it's easy to toss a Ridge Racer or a COD whatever the F in there, but variety is more fun.
