I am on the version of sx os from the past and want to uprgrade to the new beta version how do i do this and do i need to update my system to 7.0? And whaywhat is emunand

just go to the sx download page. we arent allowed to link it here. or update with sx online updater thats built into their homebrew menu.

You don't need your console at 7.x to try out the new beta.

update sxos just only replace the latest boot.dat is enough.
some guys are recommend to make a emunand on microsd, it's let you console maintain real system nand in lower version. offline upgrade emunand will not burnt efuse. so it's safe and wouldn't cause console be brick.
