I put this generic sd usb reader into my wii u and formatted it, but now it won't recognize anything on my mac. If I put an sd card in there that was formatted in the wii u format, it would format only the sd card. Is there any way to fix it or is it just stuck like this?

Make sure you format it as MBR/FAT32. Macs like to use GPT and that's not compatible with most Wii homebrew.

If you formatted with the Wii U's system menu you will only be able to use it as storage for that console. The filesystem is encrypted and hasn't been cracked.

If it won't eject and unmount when you throw it in the trash something is keeping the volume open.

Also, if you didn't realize it already, the drive isn't really a drive. It's an sd/mmc card reader. SD/MMC cards are supposed to go on the back of the thing.

Wipe the card out completely and stick it in the Wii. It should ask if you want to format it. It should work in the adapter then. If it doesn't then you might need a different USB adapter.
