Hacking GameCube controller in Nintendont

I have an aftermarket GC controller adapter from Amazon that's supposed to work with WiiU, Switch, and PC (it has a setting switch for PC and then WiiU/Switch).
I have my SD Card setup properly and am able to launch Nintendont and USB Loader GX just fine. I'm trying to get my GameCube controller working with Super Mario Sunshine. Regardless of launching via USB Loader GX or Nintendont, I can get the game to launch but I can't get past the Press Start title screen. The gamepad doesn't do anything, nor does the Wiimote or GameCube controller. I can't even exit out of the game, instead I have to restart the console.

I tried the Native Control ON and OFF in Nintendont. I've also tried different USB ports, and even switching the GC adapter between PC and WiiU/Switch modes. The GC control doesn't do anything except blink the status light when a button is pressed (GameStop model).

What am I missing?
