Everything we saw from the console rendering things are added with video-editing, which is just to give people an idea about switch's gameplay. The graphics could be better or worse, and the video could even come from a dev unit.

Note that this can potentially came out of a actually weaker chip (tegra x1) compared to the switch. So all this suggest is Switch isn't ready yet. Even the appearance could be different.

Common sense really. Recording footage directly from a screen is a bad idea since it tends to come out all ugly.

Common in advertising to make things look as good as possible. In fast food commercials they spend HOURS making the burgers, chicken etc look really sexy, via glue, airbrushes, etc etc.
