I don't really know much about Wii U. I have a softmodded Wii and PSP which I found to be pretty easy to do. Lately I like to spend an hour or two in bed every night when most people read a book and play some emulators on my PSP. When I look at a Wii U I see the potential for the perfect device to lay in bed and play emulators due to its large size. I have no interest in hooking it up to a television other than to play a handful of retail games I might purchase. Is this a reasonable option, or perhaps am I better getting a Vita for this purpose? Or should I just stick with my PSP? How good is the emulation compatibility on Wii U, and how does this stand up to the Vita?

As far as emulation on the Wii u and the vita stand, you are probably better off with an original Wii and Psp if all you are interested in is emulation.
