Can anyone here tell me the MAJOR difference between ISO and CSO.

.CSO is a Compressed .ISO.
It's just a smaller ISO at the cost of more loading and sometimes (most of the time) jumpy pre-rendered cutscenes.

You can use UMDGen to compress or uncompress your .ISO/.CSO's.

Just open up your .ISO/.CSO and re-save it as a .CSO/.ISO.

CSO has different compression levels. The higher the compression the smaller the CSO file, but the more lag there will be (especially in video cutscenes as was mentioned), generally only the highest levels will give you lag in-game.

EDIT: Also most CSO files you'll find have the UPDATE data and some other stuff ripped out, saving more size.

Or you could use CSO+ where you can omit compression of the Audio and Video files but compress everything else. Of course you'd actually need to use a dedicated compression tool for that and not UMDGEN....

Some games run faster and better as a cso example UFC for me runs faster and better as
a cso than an iso
