Changing NNID birthdate with CFW?

Back when I set up my 3DS, I entered the wrong birthdate and can't change it, meaning that I can't link accounts to merge funds. Can I use CFW to somehow edit the birthdate?

You should contact the Nintendo Customer Support and ask them to change it for you, each time I had to contact them until now they were able to help me out so far reasonably fast. Even if there's a way for to change the (local) birthdate using CFW that most likely will not work for merging funds because that will with a chance of 99.9999% compare the data present on their servers and not the one on your 3DS. When you contact the support make sure to have the console's serial number (and last 3 - 5 eShop purchases (can also be demos, etc.)) available as they most likely want that to verify that it's really your account.

You should contact Nintendo as stated, as that data is stored on Nintendo's end.
