Can I use my Wii Controller with a bluetooth dongle to run gamecube games on the dolphin emulator or do i have to buy a joybox (i think thats what it is called)

Check Bluesoleil (or another Bluetooth adapter) and GlovePie to convert UI input button to PC keyboard button, and set your emulator to use keyboard.
It's working with sensor bar too, but a little slow. note it's working for everything on your computer : assign button to keybord letters, assign pointing to mouse move etc.

I'm using Glovepie to automates program process (like a Macro with non Macro software)

Then, there were a software to show the Wiimote activity and 3 graphics with Sensor activity. But I can't remember its name nor find it on my HDD

I don't remember if it was just an activity watcher, or a gamepad adapter for windows.
