Totally depends on your ipod. IIRC touches and iphones like to store their music so you can't normally get to it using explorer (you can use other things though!). Wheel pods have music hidden in ip_control. so just show hidden files.
If I end up having to service/fix up ipods for people I usually have a copy of http://www.mediamonkey.com/ sitting around. Gets around many of the annoyances itunes has (indeed I do not even have a copy installed, even on a virtual machine).
