NES (FCEUX)
SNES (ZSNES)
N64 (PROJECT64)
GENESIS (KEGA FUSION)
PS1 (EPSXE)
GAMEBOY ADVANCE AND GAMEBOY (VBA)
NINTENDO DS (NO$GBA) mainly for Phoenix Wright when I don't have my ds with me.
MAME

Emulation on Wii:
NES (FCEU GX)
SNES (SNES9X GX)
GENESIS (GENS PLUS GX)
GAMEBOY ADVANCE (VBA GX)

I mainly emulate NES, SNES and N64 out of convenience as I don't have the space or the available outlets to leave the consoles plugged in. I do own all the consoles which I emulate and a fair amount of games for each aside from MAME of course.
 
I try to play all handheld games on the original console, which is why I have the EZ Flash IV for my GBAs and my Micro and I have an R4 for my DS. My PSP is filled with all sorts of emulators though, since I have 30gb worth of storage on it (PSP Go + my 16gb M2). I emulated stuff with my Wii for a time, but I use it for emulations nowadays except for maybe some N64 games. I rarely emulate anything on my PC though. Just don't see the point of it when I have all the original consoles I want to emulate (except the n64). And let's face it, emulators on phones just don't do the game justice. Gotta have buttons.

I gamed exclusively on my phone with emulators for almost 2 years. Having a slideout keyboard with the right layout (the rows were perfectly alternated to form "crosses" with four keys, which were perfect for matching the dpad and ABXY buttons) really helped. Later on, I used the game-gripper, and then the iControlpad.
