Retrieve game saves with Y2JB backup

I'm on PS5 Slim with an unpaired drive (had to reinstall the OS after messing up with BD-JB).
Is there a way to restore or extract and merge my game saves data to the Y2JB backup without rebooting?
Or the other way around : transfer the Youtube app to my personal backup?

Your question is a bit ambiguous here. So a few more details about the state of your console and what you intend to do would be helpful. You can't re-pair the drive without connecting to PSN with the latest firmware, for example.

Anyhow, if your PS5 is already jailbroken, then the easy and direct answer is to use Garlic Save Manager to backup the saves. After that, you can restore them later when the console is jailbroken again.

As to your second question: yes, a full PS5 system backup would include the YouTube app. It is a legitimate, signed application, after all. So you would be able to restore the backup and use YouTube.

Yes sorry I wasn't clear enough. My PS5 is a Slim with BR drive on firmware 12.0
I've managed to Jailbreak doing the following steps:

Backup my old saves on usb drive
Restore Gezine's Y2JB backup file to install the Youtube app
Jailbreak with P2JB/Y2JB/poopsploit (not sure which is which but the 50 minutes long jailbreak)
Unpatch my BD drive with bdj_unpatch.elf
Restore my ps5 profile and old saves
Use a burnt bluray to re-jailbreak after reboot

After jailbreaking, I have installed a game backup on the internal drive (next to the OS). Game crashed after a few minutes, also crashing the console and corrupting the drive, forcing me to re-install the OS and losing the BD drive pairing in the process.

Now I'm in a state where if I want to jailbreak again, I have to restore Gezine's Y2JB backup to get back the Youtube app but that will erase my saves. Restoring my saves after the jailbreak will reboot the console, and I'll lose the jailbreak.

Re-pairing the drive is also not an option right now because I would need to update the firmware.

So going back to my question : can I "merge" the 2 backup files (my personal PS5 profile and Gezine's) or can I extract my saves from my backup with my pc and reinject them to the jailbroken console with Garlic ?
