I was playing on my switch when suddenly, the pro controller I was using wirelessly suddenly disconnected. Because of that, I tried going to the change grip menu to reconnect it, and my switch froze. Ever since I rebooted it, despite the fact that i’ve ensured everything was up to date, none of my controllers would connect wirelessly. The pro controller would only connect through the port on the dock, and joycons would work completely fine in handheld mode until I detach them from the switch. Any help on what I could do? I’ve already tried holding the sync button but nothing is popping up or connecting

Try checking them on sysnand if using emunand, your sd card might be corrupted, or do a factory reset.

Try OFW to see if it is your emummc.
If they do not work in the OFW either, then it might be some hardware issue with your bluetooth/wifi module.

Try connecting some bluetooth headphones to your Switch.
If that works, then your bluetooth module is working and the joycons should be able to connect as well.

or do a factory reset.
That is a bit overkill for dealing with the issue.
If you remove the joycons from the settings menu and sync them again, then everything related to the joycons will be reset.
