In MLB The Show (as well as most sports games AFAIK), data like roster updates are downloaded in game, rather than as part of title updates. As such, with an offline cfw console you cannot get the updated rosters unless someone shares the save data with them downloaded. I was wondering if someone with the game and online access could upload such a save (I'm actually looking to use it with the PS4 version of the game, since that got backported recently, but it'd be much easier to get the data on switch than PS4).
