What is it? Where do I buy it? How long will it take to arrive? What are the installation instructions? Is it better to buy now or wait until later? Is there anything else I should know?

Right now there are 2 variants of oled specific chip, one is flashable (with usb adapter), the other one is not flashable (without usb adapter, usually comes with a QSB for CMD/CLK points). Very easy to tell them apart. Also you can use a sx core/lite or hwfly clones on an oled, but soldering and fitting the chip inside the oled can be a bit tricky. Get the flashable chip.
Average price dropped to about 100 USD on aliexpress and delivery time varies a lot, anywhere between 2-4 weeks.
Imo there won't be any more improvement on the modchip hardware, unless some new hacking method is discovered (like a softmod or new hardware exploit) or someone obtains the fpga bitstream and makes a clone of the clone. The modchip firmware is constantly updated though, that's why you should get the flashable chip.
Installation can be a bit tricky but if you are familiar with soldering and have steady hands, you can pull it off. sthetix's github has high definition pictures for all soldering points, also check out his videos.

What exactly are they called? What should I search for on AliExpress?

What improvements are made with the updates? Normally I wouldn't bother updating without a good reason.
